WILD BLACKBERRIES AND LICORICE

The wild blackberries in this jam are the wild ones, picked laboriously by hand at the highest elevations of the volcano, in places far from traffic and human presence. They are processed in combination with the best Calabrian licorice root, of unquestionable quality.
Licorice is dosed carefully, so as to give it an important but not hegemonic presence. The queen remains the blackberry, but she is a benevolent monarch who grants spaces that she herself benefits from.

Its intense flavor makes an excellent sidekick to cheeses with prolonged aging, but it also manages to respect those with medium aging. Its characteristics make it suitable forpairing with intensely flavored roasts,even betterwith a smoky component that will be

a call for licorice, whose flavor lingers long after the passage. Used with roasted red meats , it ideally recalls pairing with a high-profile Nero d'Avola .
