CONFIT GOLDEN ONIONS

Lesser-known products often have qualities unknown to more famous ones. Thus, the golden onion ofEtna surpasses in intensity its plural cousin from Tropea or its Sicilian relatives from Giarratana and Partanna.
In this version, mellowed by brown sugar, it retains a strong character that makes it an ideal companion to many strongly flavored specialties. Of a thousand uses, it is almost obvious on a slice of grilled tuna or on pork. Noble complement to a gourmet hot dog. Itenriches the texture and flavor of a slice of grilled caciocavallo ragusano cheese, laying a metaphorical red carpet for a stellar pairing with a Cerasuolo di Vittoria or Nero d'Avola from the Eloro DOC .A gustatory celebration of southeastern Sicily. In a simple version, it is best tried on a toasted bread crostini, with the addition of a hint of fresh habanero pepper.
