Lemon honey has special characteristics of freshness, as well as scents reminiscent of the citrus fruit and Sicily itself. Its sweet freshness is assisted by ginger, which we dose in our preparation to achieve an unusually delicate presence.
With conscious discretion, ginger yields to juniper the complex role of supporting and at the same time contrasting the sweetness of the base. The green and balsamic scents intertwine with the fresh and citrusy scents of the honey, enhancing it and building a linear but complex gustatory edifice, of similar workmanship and taste persistence to that of the most noble sweet wines. This honey offers numerous pairing possibilities, starting with the most natural ones, with bread and butter or with short- and medium-aged cheeses. It lends itself to a fascinating interplay of alternations when paired with a great mortadella.
