San Giovanni Montebello, a hamlet squeezed between the grandeur of the volcano and the blue of the Ionian Sea, is where the cherries, which we process by hand for this jam, come from.
After carefully choosing the best fruit, we add the amount of star anise that allows us to move into the narrow corridor of pleasantness where character and balance meet. The fleshy sweetness of the cherries continuously alternates with the freshness of the anise, in a long taste game that gives pleasure even in the simplest pairings. An excellent companion to baked hams, porchetta and medium- and long-aged cheeses. When used to complement red meats, it becomes a pillar on which to build an impressive flavor architecture made of territorial references, matching food with the cherry notes of a Sicilian Nero d'Avola .
