A twist to the common interpretation. Two fruits that are linked to thesoft drink industry, both typically Sicilian if not by birth. The chinotto, grown on the northern slope of Mount Etna and which we process whole, to extract all its complex and fascinating character. The tamarind, a tropical berry with Catania citizenship, thanks to its presence in every kiosk in the city, in the form of a refreshing drink.
A jam characterized by a pleasant bitter streak, it brings an adult but not austere note to the products it is paired with. Definitely medium-aged cheeses, but it surprises on soft cheeses where it plays elegantly with their softness to give dynamism to the passage in the mouth. Daring more, fish and meat preparations can be greatly enhanced by this jam, especially pork ones.
