The base of this jam is the Mandarin of Ciaculli, welcomed by Slow Food among its Presidia for its peculiarities. Intensely fragrant, it is processed by us, safeguarding the essential oils that are first extracted by steam and then reintroduced into the processing.
An addition of turmeric, delicately dosed, completes its taste-olfactory kit without becoming dominant. We obtain a product with a strong but unobtrusive character, perfect for accompanying cheeses to which seasoning has imparted spiciness. In particular, caciocavallo ragusano in its more mature versions, but also pecorino cheeses with a strong personality or Parmigiano Reggiano, if properly aged. The combination with white meats is very interesting, but also that with pork, when used in recipes with more delicate flavors .
