Honey from sulla, the emblem of our island, which carries in its intense flavor the beauty and strength of those purple flowers that color the countryside in late April. To this stimulating starting texture we added vanilla, which gives softness and that exotic touch.
Then, after this step toward delicacy, we change policy and add cocoa and coffee. The result is a flavored honey capable of being a dessert without the need for a sidekick. At breakfast, it turns a crouton of bread into a complete food that strongly recalls the presence of an excellent cappuccino.
It isalso capable of becoming an astounding dinner finale when paired with a goat's cheese, whose salty character it tames, enhances the milky side, and drags toward a mouth-watering finish of exhilarating length. Any cheese, from long-aged to blue cheeses, bends and cooperates, to produce an endless dance in which one step is savory and theother sweet, with roasting and coffee aromas dictating the rhythm .
