Etna's best strawberries, sourced from Maletto. And Bourbon vanilla berries, ineluctably grown in Madagascar. The two ingredients come together in a jam in which the fruit dominates, mellowed by the vanilla notes that go to make up a taste panorama that, for those whose childhood experiences include the taste of Fiordifragola, can have a moving evocative power. Summoned to the simplicity of a tasty breakfast, it gives much more when asked to enrich the taste of fresh goat cheese, yogurt or even ice cream in which vanilla acts as a trait d'union. Pairing it with fatty cured meats surprises by composing contrasting taste inputs into a complex but simply enjoyable experience.
