Pachino cherry tomatoes, justly famous for their taste. Harvested in summer, when the sun ripens them naturally. We preserve them, just as naturally, using cane sugar and lemon juice, to have them available year-round.
The tomato's versatility, with its concentrated flavor delicately innervated by acidity and sweetness, enhances the flavors of grilled vegetables, toward which it extends a bridge thanks to common slightly smoky notes. But it succeeds in lending flavor to any preparation, even when used in the pan to finish white meats or game. Or with Cantabrian anchovies, vastedda del Belice, oregano and oil, in a gourmet take on the typical Trapani bread cunzatu.
