Blood oranges, blond oranges, lemons, mandarins, mandaranges, clementines, grapefruits, citrons, limes, kumquats, pomelos, bergamots and chinottos-each with its own different varieties-are expertly peeled by hand by our artisans, allowing us to choose from time to time the proportion of pulp to peel, candiness, size of pieces, density, viscosity, final appearance and texture. The great versatility of citrus fruits also allows them to be declined in combination with other ingredients. A wide range of spices, dried fruits and fortified wines can be combined with the more traditional products.
